Raspberry Gose
This refreshing German-style sour wheat beer gets a fruity, summertime twist with raspberry purée. The traditional gose base brings gentle tartness from lactic acid. The raspberry amplify the beer's tartness while adding a beautiful pink hue and soft, fruity aromatics. Light-bodied, effervescent, and bracingly tart with a touch of salt on the finish, this gose is perfectly balanced between sour, sweet, salty, and fruity. Crushable, thirst-quenching, and ideal for hot days.
-
Irish Red
This malt-driven ale features a beautiful blend of caramel and raisin notes on the nose, and the palate. A light red appearance with very light herbal hop bitterness, complementing a smooth and sweet finish.
-
Dry Irish Stout
Our version of a classic Irish Stout: locally-grown and floor-malted Solstice Mild gives it a rich and bready character, while specialty malts provide subtle roasted coffee and chocolate notes. A creamy body and dry finish round it out.
-
Hopkins Lager
Our house Lager boasts a clean, crisp, and refreshing flavor profile with low bitterness and a smooth finish. The Nova Lager yeast profile adds a subtle fruit character to our first flagship beer, enhancing its complexity. Cheers!
-
Märzenhead Lager
Our take on märzen German lager, with a light copper color, a malt-forward flavor full of toasted bread and slight caramel notes. Featuring locally grown and malted Solstice malt.
-
Equinox Lager IPL
This lager is the secondary fermentation from our other lager brews. This allows us to benefit from the wonderful process of biotransformation. Biotransformation is the process by which yeasts change less desirable hop compounds into more desirable bold flavors and aromas. This creates a clean, crisp lager with low bitterness and easy drinking. This version, we added extra hops to increase the bitterness, similar to an IPA. Cheers!

Locals Only
This is our annual harvest beer featuring 100% local Utah ingredients! The grain is grown locally and then malted by Solstice Malt. We harvested fresh hops from around the Salt Lake Valley on brew day and threw them into the whirlpool. This hopping method is known as wet-hopping and expresses the most hop character possible from the fresh hop oils. The wild yeast was harvested from juniper berries in the Uinta mountains. The hops give a tropical citrus flavor while the yeast expresses a fruitiness that accentuates the hops; there is a slight earthiness and a full-bodied malty backbone. The best way to describe this beer is a wet-hopped saison.
-
Sauvin Blanc Brut IPA
Highly effervescent and super dry with a low malt-profile, this beer style focuses on white-wine characteristics from Hallertau Blanc and Nelson Sauvin hops, hence the name. Local Chardonnay grapes are added to the fermenter to make this a true wine-beer hybrid.
